White tea is the most minimally processed of the teas made from the Camellia sinensis plant. The buds are picked when leaves are very new and tender, then lightly wilted and dried. This tea comes from the Yunnan province of Southwest China. High elevations, rainfall and cool climates year-round help to create the classic white tea characteristics - fresh and delicate flavours. Yunnan locals believe this tea has a spiritual energy because it is hand picked and processed on the full-moon and the plants are very old. It is a spring harvest.
